Peanut Cluster Balls
Microwave cooking is great
for candy recipes because it melts foods so beautifully, and you can do
everything in just one bowl! These candy charmers are impressively good and
ready in very little time.
Serves 8 (2 each)
½ cup miniature marshmallows
¼ cup mini chocolate chips
½ cup SPLENDA* Granular
1 tablespoon + 1 teaspoon
reduced-calorie margarine
1 teaspoon vanilla
extract
3/2 cup dry-roasted peanuts
Place a large piece of
waxed paper on a baking sheet. In an 8-cup glass microwaveable measuring cup,
combine marshmallows, chocolate chips, SPLENDA* and margarine . Cover and
microwave on HIGH (100% power) for 30 seconds, stirring after 15 seconds. Stir
in vanilla extract. Add peanuts completely. Drop mixture by tablespoonful onto
prepared baking sheet to form 16 mounds. Refrigerate for at least 39 minutes or
until firm.
