Spanish Ham Rice
If your kids love ham as much as mine do, here’s fast and
fun way to serve it . And it you’re economizing ( aren’t we all?) , don’t you love that fact that you can feed four
using than a pound of ham?
Serves 4 ( 1 cup)
1 cup chopped onion
1 cup chopped celery
1 ( 15 –ounce) can dices
tomatoes, undrained
1 cup water
2 tablespoons SPLENDA
Granular
½ teaspoon chili
seasoning
1 teaspoon dried parsley
flakes
1 ½ cups diced extra –
lean ha
1 cup uncooked instant
rice
In a
large skillet sprayed with butter – flavored cooking spray , sauté onion
and celery for 8 minutes or just until celery is tender. Stir in undrained
tomatoes , water, SPLENDA, chili seasoning and
parsley flakes . Add ham and uncooked rice. Mix well to combine. Lower
heat , cover and simmer for 15 minutes or until vegetables. And rice are tender
, stirring occasionally.
