Calico Beef Pepper Bake
Are you one of those people who dig
out the stuffing from traditional stuffed peppers? Don’t feel badly, there are
lots of you out there! This colorful casserole is so pretty on the plate
Serves 4
8 ounces extra – lean ground
sirloin beef or turkey breast
1 ½ cups diced green bell
pepper
½ cup finely chopped onion
1 (8 ounce) can tomato
sauce
2 tablespoons SPLENDA
Granular
1 cup frozen whole –
kernel corn
1/3 cup uncooked instant
rice
¾ cup shredded reduced –
fat Cheddar cheese
Preheat oven to 350 degrees. Spray on
8-by-8-inch baking dish with butter -0 flavored cooking spray. In a large
skillet sprayed with butter – flavored cooking spray, brown meat, green pepper,
and onion. Stir in tomato sauce and SPLENDA. Add corn, uncooked rice and
Cheddar cheese . Mix well to combine . spread mixture into prepared baking
dish. Bake for 25 to 30 minutes. Place baking into prepared baking dish. On a
wire rack and let set for 5 minutes. Divide into 4 servings.
