CARROT SOUP - Home made Easy healthy Vegetable Soup

CARROT SOUP :

Ingredients :

Onion -1

Carrots – ¼ kg

Green chilli – 1

Ginger – 1 inch piece

Mint leaves – 5

Fresh Cream – 2 Tbl.sps

Water – 3 cups

Processed Cheese – 1 Cube

Salt and Sugar

Pepper powder

Butter – 2 Tsp

 

Procedure  :

1)      Drop whole carrots in hot water and keep closed for 2 to 3 min

2)      Drain water and chop into medium sized pieces

3)      Heat little butter and fry chopped onions for 2 minutes in reduced flame

4)      Take a clean cloth and tie green chilli , ginger and coarsely chopped mint in that .

5)      Take 3 cups of water in pressure cooker and add onion , carrots and tied muslin bag in that

6)      Pressure cook for 5 to 7 min

7)      Remove from fire and cool down

8)      Squeeze and discard the spice bag

9)      Blend the vegetables in a mixie and strain through a sieve

10)   Dilute with water as per taste and add salt

11)   Heat till boiling point , stirring constantly

12)   Add pepper powder and finely graced cheese just before serving
