Broccoli
Cashew Salad
I had to test this on friends and
family since my husband continues to pass on broccoli- based dishes, (Nobody’s
perfect , but he comes very close) Everyone agreed how nice it was to savor the
flavor of cashews even while eating for better health!
Serves 6 (1/2 cup)
3 cups chopped fresh
broccoli
½ cup seedless raisins
¼ cup finely chopped
onion
6 tablespoons chopped
cashews
¼ cup purchased real bacon
bits
½ cup fat – free
mayonnaise
1 tablespoon white
distilled vinegar
¼ cup SPLENDA Granular
In a large bowl, combine broccoli
raisins, onion, cashews and bacon bits. In a small bowl combine mayonnaise vinegar
and SPLENDA Add dressing mixture to broccoli mixture. Toss gently to coat.
Cover and refrigerate for at leasr30 minutes. Gently Stir again just before
serving.
