South Seas Carrot and Raisin Salad

A taste of this and you’ll start to feel those tropical breezes wafting through your hair! It’s amazing how just the right mix of flavors can carry you off to paradise. 

Serves 6 (2/3 cup) 

2 (8 – ounce) can pineapple tidbits, packed in fruit juice, drained
And 2 tablespoons liquid reserved
½ Cup fat – free mayonnaise
2 tablespoons SPLENDA Granular
3 cups grated carrots
¼ cup seedless raisins 

In a medium bowl, combine reserved pineapple, liquid, mayonnaise and SPLENDA. Add carrots, pineapple, and raisins. Mix well to combine. Cover and refrigerate for at least 30 minutes. Gently stir again just before serving. 

Each serving equals
