Oatmeal Coconut Cookies

Double your pleasure means double the flavor in this coconutty cookie. I’m a big fan using extracts to convince you you’re eating a lot more coconut than  you  you’re eating a lot ,more coconut than you actually  get

Serves 12 ( 2 each)

½ cup reduced calorie margarine
1 cup SPLENDA Granular
12  egg, or equivalent in egg substitute
½ teaspoon coconut extract
1 cup quick oats
1 cup cake flour
1 ½ teaspoon baking powder
½ teaspoon baking soda
½ cup flaked coconut

Preheat oven to 350 degrees. Spray 2 baking sheets with  butter – flavored cooking spray. In a large bowl, cream margarine and SPLENDA , using a sturdy spoon. Stir  in egg and coconut extract. Add oats, flour , baking powder, and baking soda . Mix gently just to combine. Fold in coco nut, Drop batter by tablespoonful onto prepared baking sheets to form 24 cookies. Lightly  flatten cookies with the bottom of a glass sprayed with butter – flavored cooking spray. Bake for 10 to 12 minutes. Do not overbake. Place baking sheets on wire racks and let set for 5 minutes Remove cookies from  baking sheets and continue to cool on wire racks.
