Rising sun Carrots

What a sunny plate pleaser this microwave vegetable dish is! It’s visually appealing and shows off the natural sweetness of the carrot

Serves 6 ( 2/3 cup)

3 cups frozen cut carrots, thawed
½ cup chopped  green bell pepper
¼ cup chopped onion
2 tablespoons water
1 ( 10 ¾ - ounce) can sliced water chestnuts , drained
2 tablespoons SPLENDA Granular
1 ½ teaspoons Oriental or five – spice seasoning

 In an 8-cup glass measuring bowl, combine carrots , onion and water. Cover and microwave of HIGH (100% power) for 8 to 10 minutes or until carrots are just tender, stirring after 5 minutes. Stir in tomato soup, water chestnuts , SPLEMDA and Oriental seasoning . Re- cover and Continue to microwave on HIGH for 3to 4 minutes or until mixture is heated through. Gently stir again. Serve at once.
