Mom’s applesauce and Raisin bars
My friend Barbara’s mom always
stirred applesauce and raisins into her oatmeal hen she was a little girl, and
when Barbara tried these, she said that they reminded her of her mom’s sweet
touch with cereal ! Check that your applesauce is the natural, unsweetened kind.
Serves 8 (2 each)
¼ cup reduced – calorie
margarine
¾ cup SPLENDA Granular
1 egg, or equivalent in
egg substitute
1 cup unsweetened applesauce
1 cup all purpose flour
1 teaspoon baking soda
1 teaspoon apple pie
spice
½ teaspoon table salt
½ cup seedless raisins
¼ cup chopped walnuts
Preheat oven to 350 degrees. Spray a
7-by-11-inch biscuit pan with butter – flavored cooking spray. In a large bowl,
cream margarine, SPLENDA, and egg until mixture light and fluffy, using a
sturdy spoon. Stir in applesauce. Add flour, baking soda , apple pie spice, and
salt. Mix gently just to combine. Fold in raisins and walnuts. Spread batter evenly
into prepared pan. Bake for 24 to 26 minutes. Place pan on a wire rack and
allow to cool completely. Cut into 16 bars.
