Pears Helene coffee Cake
This impressive combination of sweet
chocolate and juicy pears makes a fabulous brunch finale or a festive way to
show friends you think thy’re special. It’s really rich delight that is perfect
for a party.
(Serves 8)
1 ( 15- ounce) can pears, packed in
fruit juice , drained and ½ cup liquid served
1 ½ cups reduced fat biscuit baking
mix
½ cup SPLENDA Granular
¼ cup unsweetened cocoa powder
¼ cup no fat sour cream
1 egg, or equivalent in egg
substitute
1 teaspoon vanilla extract
¼ cup mini chocolate chips
Preheat oven to 375 degrees. Spray on
8-by-8-inch baking dish with butter flavored cooking spray. Finely chop pears.
Set aside . In a large bowl, combine baking mix. SPLENDA, and cocoa. Add sour
cream , egg, reserved pear juice, and vanilla extract . Mix gently just to
combine. Fold in pears , walnuts, and chocolate chips. Evenly spread batter
into prepare baking dish. Bake for 25 to 30 minutes or until a toothpick
inserted in center comes out lean. Place baking dish on a wire rack and let set
for at least 15 minutes. Cut into 8 servings.
