Banana Bonanza Muffins

Light, lovely, and velvety, these muffins deliver an abundance of rich banana taste. You’ll feel as if you’ve uncovered buried treasure when you enjoy a muffin prepared with this simple recipe.

(Serves 8)

1 ½ cups reduced – fast biscuit banking mix
½ cup and SPLENDA Granular
1 teaspoon baking powder
¼ cup reduced – calories margarine
1 egg, or equivalent in egg substitute
1 cup (3 medium) mashed ripe bananas

Preheat oven to 375 degrees. Spray 8 wells of a 12 hole muffin pan with butter flavored cooking  spray or lie with paper liners. In a large bowl, combine banking mix. SPLENDA, and baking powder. Add margarine, egg, and mashed banana, Mix gently just to combine. Evenly spoon batter into prepared muffin wells. Bake for 15 to 20 minutes or until a toothpick inserted in center comes out clean. Place muffin pan on a wire rack and let set for 5 minutes. Remove muffins from pan and continue cooling on wire rack.
