Shrimp Creole

Shrimp Creole

Do you fond you’re eating shrimp more often now that the big – box stores like Costco offer such great process on bags of frozen shrimp? Even if you live nowhere near a harbor, you can still satisfy your urge for healthy, spicy seafood!

Serves 4 (1 cup)

½ cup finely chopped onion
½ cup finely chopped green bell pepper
1 ( 14 ½ - ounce) can stewed tomatoes
1 tablespoon white distilled vine gar
1 tablespoon SPLENDA Granular
2 to 3 drops hot sauce
1/8 teaspoon ground oregano
1/8 teaspoon black pepper
1 ½ cups cooked rice
1 ( 5- ounce) package frozen shrimp cooked and drained

In a large skillet sprayed with butter flavored cooking spray, sauté onion and green pepper for 6 to 8 minutes or just until vegetables are tender. Add stewed tomatoes, vinegar, SPLDENA, hot sauce, oregano and black pepper. Mix well to combine. Lower heat and simmer or 15 minutes, stirring occasionally. Stir in rice and Shrimp, Continue simmering for 5 minutes or until mixture is heated through stirring occasionally.
