Italian Veggie Relish

Every good Italian restaurant features a colorful and aromatic antipasti display, and among the choices will usually be some tangy crunchy vegetables. Your eyes will feast first, and then your taste buds, what a splendid start to a meal 1

Serves 6 ( 1/3 Cup)

½ Cup fat – free Italian dressing
3 tablespoons SPLENDA Granular
1 ½ cups finely chopped unpeeled zucchini
1 cup shredded carrots
¼ cup finely chopped red and / or green bell pepper
¼ cup finely chopped onion

In a medium bowl, combine Italian dressing and SPLENDA. Add zucchini, carrots, bell pepper and onion. Mix well to combine. Cover and refrigerate for at least 1 hour. Gently stir again just before serving.
