Almost Candy Cookies

Almost Candy Cookies

The line between cookies and candy and candy is already a little fuzzy, isn’t it? Let’s just say that these cookies have enough sweet treat in them to deserve a home in Candyland!

Serves 8 (2 each)

1 cup Cake flour
1 teaspoon baking powder
½ teaspoon baking soda
¾ cup SPLENDA Granular
½ cup reduced calories margarine
1 egg, or equivalent in egg substitute
1 teaspoon coconut extract
¼ cup mini chocolate chips
2 tablespoon flaked coconut

Preheat oven to 375 degrees . Spray 2 baking sheets with butter – flavored cooing spray. In a large bowl, combine flour, baking powder, baking soda, and SPLENDA. Add margarine , egg, any coconut extract., Mix gently to combine. Fold in chocolate chips and coconut. Drop batter by tablespoonful onto prepared baking sheets to form 16 cookies. Lightly flatten cookies spray, Bake for  8 to 10 minutes. Do not overbake. Place baking sheets on wire racks and let set for 5 minutes. Remove cookies from baking sheets and continue to cool on wire racks.
